Details

Aged sheep´s milk cheese made from raw sheep´s milk. A strong palate with aromas rich in sheep´s milk, a semi-firm texture, ivory color, with small eyelets and irregularities.
The appearance is cylindrical with flat sides and a well-defined perimeter with the markings of the traditional esparto webbing. The color of the crust is brown with olive tones with a certain transparency that allows you to see the ivory paste and in some edges this mass tone clearly reveals the color of the interior of the cheese.
This is a Spanish viejo cheese, which means that in the category of maturity it is aged longer than a curado, but not as long as an añejo. The flavor is very well-developed and persistent in the mouth with a long aftertaste.

Aged 10 months.

Store in the refrigerator and consume at room temperature.

Best Before: at least 3 months from reception.
