Serrano ham shoulder (paleta). Average leg weight: 4.4- 4.9 kilos.The Serrano ham comes from domesticated white pigs. It is slightly saltier than Iberian pork, but the pork that makes this ham is of such high quality, it is often mistaken for Iberian ham. A unique mellow taste. Animals are fed an all-vegetarian diet. This piece, the paleta, comes from the front legs or shoulders of the pig. Dry cured in natural conditions for 14 months.
