The cornerstone of that envious Mediterranean diet is olive oil, extra virgin if you can get. It contains those good monounsaturated fats that keep your cookery interesting, rich and flavorful. ‘La Chinata’ Extra Virgin Olive Oil is pure olive juice of olives recollected in de region of Sierra de Gata, in the north-east of the province of Cáceres. Here, they collect only those olives that meet the standards considered fundamental to obtain extra virgin olive oil of the highest quality. The olives should be clean, healthy, without any visible defects and in their optimal point of maturity. 
Only with this method of selection La Chinata says be sure to guarantee the continued quality of their extra virgin olive oil to the customer.
Their extra virgin olive oil is characterized mainly by four factors:
An intense yellow colour with a hint of green;
A mellow sweet taste, without the sharpness or the bitterness characteristic of the olive oils from the south of Spain. The tasting of our olive oils is an authentic pleasure; 
A dense fruity mature aroma;
A very high fatty acids content, in this respect it is one of the best extra virgin olive oils of all Spain.

Title 1 The Origin of La Chinata

The history of La chinata begins around 1932, when their ancestors began to grind olives from their region: Gata’s mountain range. In those days, olive oil was obtained in rudimentary olive-oil mills. Olives were put into stone mills to be crushed, and a paste came out as a result. Such paste was later on put into a press in order to extract the oil. Paste layers were formed, and they were separated by circular plates. By pressing those plates olive oil was extracted. The olive oil that came from the process was decanted to separate it from the Alpechín: a mixture of water and olive residue.
Nowadays, they count on the most advanced grinding and pressing systems, and, although, they are still purely mechanical processes; they are able to extract a lot more oil in a very clean and controlled manner in order to guarantee the quality of an extra virgin olive oil.
Aware of the growing concern among their clients to consume healthy, natural foods; they have for some time been producing a top quality range of products under their brand: La Chinata gourmet selection. They are mostly products made of their best virgin extra olive oil, but they have recently added several vinegars, honeys, salts, among other products.
