As they harvest old and ancient vineyards (bush vines), there is no possibility to mechanize harvest and therefore all their grapes are hand-picked, which is also a perfect way to guarantee the highest quality. Prefermentative cold maceration during 3-5 days. Alcoholic fermentation in stainless steel tanks for 10 days and another 7 days for the malolactic fermentation.
